After the sausage has been ran through the grinder the first time you will add seasonings to your sausage. We like sage, onion powder, pepper, kosher salt, garlic...we like to try out different seasoning combinations. We do not have measurements as we just throw the spices in and hand kneed them in to the batch.
We have found it is easy to under season sausage. If it is under seasoned simply add when you cook it.
If you are using casings for your sausage you will fill them after the second grind.
We feel a third grind makes the meat mushy.
